Question about this recipe i found?!?
Breads, Muffins, Biscuits
1/2 cup softened butter
1/2 cup sugar
2 eggs
1 cup sour cream
1 tsp. vanilla
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
Marble mixture:
1/2 cup brown sugar
1/2 cup finely chopped walnuts
1 tsp. ground cinnamon
(save 2 T. for top of muffins)
Cream sugar and butter. Add eggs, sour cream and vanilla. Mix in flour, baking powder, soda and salt. Beat well. With a knife, cut the marble mixture into the batter. Do not mix. Pour batter into 11 or 12 muffin cups that are well greased. Sprinkle sugar mixture on top. Bake at 375 degrees for 22 minutes.

maybe im slow but that doesnt make sense.
Make the batter.
Make the marble mixture.
Spoon the marble mixture on top of the batter.
Using a knife (a table knife will do, or any other), make a cutting motion down through the layered mix.
Pull the knife out, and repeat.
Repeat this cutting motion until the marble mix is partially incorporated into the batter.
This is a gentle way of combining the marble mix and the batter. Mixing (with a whisk, fork, or other implement) is what you want to avoid. The reason for this is to avoid activating the gluten in the flour, which would happen with strong mixing methods. Activating the gluten in the flour would give you a very chewy, bread-like result. So use a very light hand when combining the marble mix and the flour!
Also, doing this gives a "marbled" effect, rather than a thoroughly mixed batter.
